Flaky Short Crust Pastry Recipe
I love making pastry, especially shortcrust. It’s simple to put together and makes a tasty base for savoury pies and tarts. This is also a great customisable recipe and can easily be used for sweet tarts, all you need to do is a tablespoon or two of sugar and you’ve got the perfect sweet crust. The trick to making a great flaky pastry dough is to handle it as little as possible.

Ingredients
- 225 g plain flour
- 95 g Vegan Butter
- 1/2 tsp salt
- 6 tbsp 60 ml Iced water.
- 1 tbsp Soya Protein Yogurt
Instructions
- The first thing you need to do is weigh out all your ingredients and have it to hand. Next, chop up all the butter and set it to one side. For best pastry results, make sure the butter has come straight out of the fridge.
- Sift flour into a bowl and mix in the salt. Then using a fork mix in the butter until it resembles breadcrumbs. Stir in the tablespoon of yogurt.
- Now gradually add in the iced water, again mixing with your fork only. Once it starts to come together in large clumps, shape it quickly into a rough ball with your hands. Wrap it in grease proof paper and refrigerate it.
- If you are making a pie, ensure it has been in the fridge for at least an hour before you use it.
You are on to a winner with this deliciously easty to make shortcrust pastry recipe. Perfect base to your savoury tarts and with a sprinkle of sugar makes your sweet tarts sweeter.
Add your butter and yogurt to your flour as above. Using a fork, I like to blend the butter into the flour until it resembles rough bread crumbs.
Gradually pour in the ice water. Gather together into a dough ball. Don’t over handle the pastry. Wrap it up in greaseproof paper and pop into the fridge for a minimum of 20 minutes.
Roll out your dough.
Then add it into a well greased pie dish or tin. Then Line with tinfoil or greaseproof paper add in some dried rice or peas and blind bake for about 10 minutes or so before you add your filling.
