  • When the cupboards almost bare... 😯

I made this Mexican inspired dish with literally what was left, rice, corn, blackbeans, my last onion and I always have garlic. The one thing that I always have is spices so I charred the corn, boiled the rice fried off onions and garlic. Tossed in the blackbeans, cooked rice and corn and seasoned with 💃🏽
Crushed coriander
Cumin
Smoked paprika 
Sweet paprika 
Chilli flakes 
Salt
And a dash of veg stock.
Six ingredients and made this dish in under 30 mins. Topped it off with fresh coriander and a shot of hot pepper sauce!

1 Tbsp Olive oil
1 1/2 Cups Rehydrated soya mince (gmo free)
1 Cup Chopped cherry tomatoes See notes at the end
1 Medium Onion
5 Cloves Garlic
1 Cup Passata
1 Cup Veg stock
1 Bunch Fresh basil Or tbsp dried basil
1 Tbsp Paprika
1 Tbsp Fresh thyme Or 1 tsp dried thyme
1 Tbsp Dried oregano
1/2 Tsp Salt
1 Tsp Black pepper
2 Cups Vegan Mozzarella
6 Sheets Dried lasagna
Bechamel Sauce recipe
3 Tbsp Butter
3 Tbsp Flour
3 Tbsp White wine
1 1/2 Cups Hot milk
1/2 Tsp Salt and Pepper
Add a pinch of nutmeg

Spicy scrambled tofu seasoned with a pinch of salt, turmeric, cayenne pepper, garlic and onions granules and about a tbsps of nutritional yeast. Balanced out the flavors by adding in some caramelised onions and chopped up some precooked vegan sausages. Sooo tasty! Added grilled tomatoes and mushrooms.

  • For a change lemon and poppyseed 
#recipes

3 cups self raising flour
3 tbsp caster sugar
1/2 tsp salt
2 tbsp poppyseeds 
1 tsp baking powder 
1 tsp cream of tartar 
1 lemon squeezed
Zest half lemon
1/2 cup vegan butter plus 3 tbsp
1 cup vanilla soya milk 
#method
Add lemon juice to soya milk
Let curdle
Mix dry ingredients including poppy seeds and lemon zest
Add and blend in butter
Add lemon curdled milk 
Mix till ingredients resembles
Dough.

Preheat oven to 200 C

Roll it out so it’s about an inch thick.
Cut out some rounds.
Grease a baking tray.
Add your scones and coat with some milk.

Put in the oven and bake for about twenty mins till golden brown.
