
A deliciously fresh and vibrant salad. Inspired by flavours from Morocco, aromatic, citrusy with a spicy twist!
Moroccan Inspired Couscous Salad
Ingredients
- 1 Cup Couscous
- 1 1/2 Cups Veg Stock
- 1 Large Clove Minced Garlic
- 1 Small Onion finely chopped
- 1/2 Green chilli, seeded and chopped
- 1 Lime squeezed and zested
- 1/2 Lemon Squeezed
Herbs and Spices
- 1/4 Tsps Salt
- 1 Tsp Ground cumin
- 1/2 Tsp Ground coriander
- 1 Tsp Fresh Thyme Chopped
- 3 Tbsp Chopped fresh coriander
- 1/4 Tsp Cayenne pepper
- 1 Tsp Dried parsley
Salad Veg
- 1 Cup Chopped Carrots
- 1 Cup Chopped red pepper
- 2 Cups Baby spinach leaves
- 1 Cup Diced cucumber
Instructions
- Add your couscous into a large bowl. Followed by your dry spices, cumin, coriander, cayenne, parsley.Pour over your hot veg stock, cover and leave stand for ten minutes.
- After time is up add in the rest of your ingredients.Garlic, chilli and onion.All your salad vegetables.Squeeze lime and lemon and zest into a jug.Pour over the salad.Add they coriander and thyme.A pinch of salt and pepper to taste.,Eat, savour, Enjoy!
