This is a really simple recipe. It’s the perfect side to have with Chilli Non Carne, or piled on top of Enchiladas. You can have it as a dip with tortillas crisps or simply spread it on toast for breakfast.

Freshly chopped scallions add a bit of crunch, flavour and freshness to the guacamole.
Make sure when shopping you select ready to eat avocados for your receipe. A squeeze of lime adds a nice zing to the recipe. Also, lime juice will stop the avocado from browning. Don’t forget to sprinkle on some salt at the end of the recipe to flavour.
