The first thing you need to do is weigh out all your ingredients and have it to hand. Next, chop up all the butter and set it to one side. For best pastry results, make sure the butter has come straight out of the fridge.
Sift flour into a bowl and mix in the salt. Then using a fork mix in the butter until it resembles breadcrumbs. Stir in the tablespoon of yogurt.
Now gradually add in the iced water, again mixing with your fork only. Once it starts to come together in large clumps, shape it quickly into a rough ball with your hands. Wrap it in grease proof paper and refrigerate it.
If you are making a pie, ensure it has been in the fridge for at least an hour before you use it.
