Ingredients

Units Scale
  • 120 ml White wine
  • 100 ml Olive oil
  • 1.5 cups Flour (Follow recipe before you add flour)
  • 1/2 cup Pitted black olives
  • 1 Tbsp Herbs de Provence (See notes for alternatives)
  • 1/2 Tsp Salt
  • 1 Tsp Baking powder
  • 3 Cloves Garlic roughly chopped

Caramelised onions

  • 2 Tsp Oil
  • 4/5 Large Pink or Red Onions
  • 1 Tsp Sugar
  • 1 Tbsp Apple Cider Vinegar
  • 1/4 Tsp Salt

Instructions

  1. Get a large mixing bowl. Add your wine, oil and herbs and mix.
  2. This next step is important. Add the baking powder and salt to your flour and using a sieve and a wooden spoon, gradually sift about a cup of flour into your liquid mix.
  3. Continue to sift your flour until you have a sticky dough. You may use up to two cups.
  4. Grease a baking sheet and roughly roll out your dough onto the sheet.
When this is done pop it into the fridge for about 20 minutes.
  5. While your dough is chilling, you can pop on your oven to get it heated up (200 C).
Chop up all of your onions.
  6. Then heat up about 2 tsp of oil in a pan and add your chopped onions.
To caramelise the onions, brown them a little in the pan with a pinch of salt. As the onions begin to brown add in your apple cider vinegar and about a teaspoon of sugar. Continue to cook until onions are browned and sweet.
    Then put to one side.
  7. Get your chilled flatbread from the fridge and aerate using a fork.
Pop into your oven for ten minutes (don’t add onions at this stage).
  8. After ten minutes remove from the oven and now cover with the caramelised onions. Put back into the oven for another ten minutes.
  9. Once this ten minutes is up, remove, add your black olives and garlic and return to the oven for 5 minutes.
  10. Remove from the oven and your delicious and easy flat onion bread is ready to be enjoyed.
