This is a great dish to add to your vegan Sunday or any day roast. Simple oven roasted Brussels sprouts with a zingy balsamic and maple syrup dressing. Who said Brussel sprouts were boring?
Tastiest Oven Roast Brussel Sprouts
- 1 bag Brussel sprouts washed and oven ready
- 1 tbsp olive oil
- 1/2 tsp lemon zest
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tsp Balsamic Vinegar
- 1 tsp Maple Syrup
- Sprinkle black pepper
- Preheat olive to 220 C/428F
- Add the sprouts to a baking dish. Drizzle over the oil, add the lemon zest, salt and pepper and pop into the oven for about 25 minutes, or until tender.
- Once the time is up, remove from the oven. Make your dressing, drizzle over the sprouts, its that simple.
This is probably one of my most favourite vegetables to eat. I don’t eat them often but when I do, its always as part of a feast. They’re the marmite of veggies, you either love them or hate them, but this here mother cooker adores them.
Drizzle on your dressing, serve and enjoy.
